CampGurus Episode 1: Camp Curry & Jefferson County Lake

We are so excited to officially launch our very first CampGurus episode on YouTube: Camping Curry and Jefferson County Lake. We hope you enjoy spending time with our family as we cook some deeeee-licious camping curry, discuss our latest RV accessory must-have, and the reason why Jefferson County Lake in Rigby, ID, has our hearts as a favorite place to come with our family. THEN the girls and I have a little bit of fun sitting around the campfire and singing “Consider the Lilies.” I (Sunny) have been singing this song since I was about 16 years old. It’s a family favorite and has become a regular hymn for all of us – the words are comforting and beautiful. When my Grandpa Daw passed away, my sisters and I even sang it at his funeral….because he, too, loved this song. There’s nothing quite like having your daughters take the song over and sing it without you! Haha! I was planning on at least singing harmony with them, but it became clear quite quickly that they could handle it without me! However, I am really happy to pass this song on to them – and maybe they will even learn the words well enough that they won’t have to look at their phones and can pass it on to their children as well… hehehehe. Don’t tell them I said that – they probably won’t even read this. ANYWAY – hope you enjoy it, also! 😉 One thing I “FORGOT” to mention in the video (it WAS pretty handy to forget this!) was that I BURNT THE RICE in the dutch oven! Haha! I knew there was a reason I really wanted to use my rice cooker…. but seriously, I put the right amount of water in. I think the heat must just be a little different than I am used to? I feel like I could have used double the water the rice called for and it would have been just right. Even the parts of the rice that were not burnt were still a little crunchy… so I think more water would have been ideal! Yeahhhhhh…. I’m old enough to have a 20-year-old daughter, but still not the greatest cook on the planet! No secret there!

Camping Recipe: Curry

This will feed about 6-8 people… depending on how many servings each person takes! 🙂 Ingredients: 4 Potatoes 10 Baby Carrots 1 Package of Stew meat 1 Curry block 2 Cups Rice 2 Cups(ish) Water Tools: You can cook your curry over the fire or over a camp chef, like we did! You just need one medium-sized pot for your curry and one pot for your rice. Directions:
  • Add water to a dutch oven and start the rice cooking! Keep an eye on it so you don’t burn it like I did!
  • Cut the meat, potatoes, and carrots into bite-sized pieces.
  • Cook the meat in a dutch over without any water, potatoes, or veggies. Leave it a little ‘rare’ because it will continue to cook when you add the water, potatoes, and carrots
  • Add about a cup of water, the potatoes, and the carrots. Just make sure there is enough water to cover everything
  • Cover and cook until the potatoes are tender
  • Remove the dutch oven from heat.
  • Add the curry block. Here’s where you will need to add a little water, but a little goes a long way! You may like your curry on the thicker side – or you may like it a little runny. The choice is yours! I always just add a little at a time until it gets to the thickness I like!
